Chicken stir fry with Cauliflower Rice

Tried my hand at Paleo inspired cooking tonight. I was going to make a spinach chicken dish but I had some super fresh baby bok choy in the fridge. It inspired me to try cauliflower rice and an Asian style stir fry with fresh garlic, ginger and a small amount of soy.

My little man was pinching the cauliflower rice before dinner was even on the plate. Massive success for my little family. πŸ™‚

I think I will have to research the paleo diet more and learn more about what foods are paleo as well as what the portion size should be. πŸ™‚


Smashed it and I’m feeling great!

Today is the first day of my new healthy living challenge.
So like all good challenges last night my littlest munchkin woke frequently. Thankfully with some friendly motivation I gave it my everything and now feel great.

I’m going to chalk day one up to a success on the exercise front. On the healthy eating front I have ignored the temptation to reach for those carb filled snacks and managed to drink 3 litres of water already. Hopefully I can keep this up.

Our Village VegieΒ delivery arrived today so that means tonight I will write up this weeks healthy meal plan. I think writing a meal plan will help keep me on track and full of clean, fresh fruit and vegetables.Β

My challenge to myself…

As of the 1st of August I am going to readjust my lifestyle again.
Last year I committed myself to the Michelle Bridges 12wbt challenge. It was a great success.
I lost 7kg through changing my diet. I didn’t exercise but just ate right.

If I am going to be completely honest I have been slack. I have been having WAY too many treats. I have gained a little back but not enough to worry too much. My biggest weakness is chocolate. So I think I will have to be strong on that front.

This August I plan to start cooking the 12wbt meals again. Cut back on my coffee intake and drink more water. I am also looking into creating another daily exercise challenge for myself. I felt great last time I did that.

By summer I dream of feeling great.

Day 19 – Flab2Fab February

Well some how life got crazy and I haven’t been on to blog. We are up to day 19 of our challenge, a day of rest.

My biggest hurdle to keeping on track is remembering to actually JFDI!

So I will part with 2 tips:

1. Pop reminders into your phone for a set time.

2. Do NOT exercise after moisturizing your feet. It is bad for your health πŸ˜‰
