Look what I made – Artisian No-Knead Bread

This is seriously the easiest to make and tastiest homemade bread!

It is a lovely soft bread with an awesome crunchy crust. When my friend shared this no-knead bread recipe I was very curious so I clicked on the link and was delighted to see how easy it looked. It is seriously as simple as it looks and has no nasties in it. I seriously suggest trying it. Don’t be put off by the amount of time you wait before baking it; it is worth it. 🙂

By now most of you would know that I am totally obsessed with the idea/dream of owning a thermomix. You might also know that I love a good cause; a way I can help others have a better quality of life. Well today one of my lovely friends posted a link on her facebook page with this message

“For Facebook friends who know Tiff – so far we have raised $830 – nearly half way towards the purchase of the Thermomix for Tiff and her family.

I saw the post and wondered what her post was about so I sent her a message asking her if the post was for a good cause. My lovely friend took the time to send me some links and share Tiff’s story, and what a story to share.

Tiff is an amazing woman who has so much on her plate. She is much more than ‘just a stay at home mum’ to 7. Please if you haven’t clicked on the previous link click on this one and read her story.

Her friends are raising money to buy her a thermomix because Tiff definitely could do with one. It would save her so much time, money and truly make everyday life much easier for her and her family.

Quick toddler meal tip

Have you ever gotten to the afternoon and thought, oh no what will I feed the kids tonight?
Normally we eat as a family, after Marty gets home, but some days the kids are really tired and I don’t have everything I need for dinner that night. On these nights I prefer to make quick meals that are healthy and just for the little ones. Last night was one of these nights.

Thankfully I always have pasta, some vegies and a jar of organic baby purée in our house. Last night we used this one, the boys love it.

Last night I just cooked up some carrot and pasta, stirred the puree through and added some grated cheese. There is no need to heat the baby food before stirring it in.

It is a quick, cheap and healthy meal option that is far better for the little ones than fast food.

My challenge to myself…

As of the 1st of August I am going to readjust my lifestyle again.
Last year I committed myself to the Michelle Bridges 12wbt challenge. It was a great success.
I lost 7kg through changing my diet. I didn’t exercise but just ate right.

If I am going to be completely honest I have been slack. I have been having WAY too many treats. I have gained a little back but not enough to worry too much. My biggest weakness is chocolate. So I think I will have to be strong on that front.

This August I plan to start cooking the 12wbt meals again. Cut back on my coffee intake and drink more water. I am also looking into creating another daily exercise challenge for myself. I felt great last time I did that.

By summer I dream of feeling great.

Soaking up the warmth

For the first time in what feels like forever it is lovely outside.
It is 12 degrees with only a light breeze making the leaves on the tree dance.

Happy boys – check

Bliss!

I’m working on a snugly blanket for my big sister. In April she saw this Acrylic yarn in spotlight and fell in love with it. After waiting, not always so patiently, for my needles to arrive I am finally knitting her blanket for her. Such a beautiful colour.

As I look around the house it appears I have a FEW things to be thankful for. 😉
This afternoon I want to say thank you for the pile of clean laundry waiting to be folded, the toys covering the floor and my dirty coffee mug waiting to be washed BUT my biggest thank you of all is for the NOISE.

I am saying thank you to these things because they are the things that have made me feel frustrated at least once today. This morning they jogged my memory and I am not talking of just the before children, quiet, clean house days.

It just so happens that I quite possibly have the loudest boys in the world! Today they are being quite full on, playful and very demanding. For a few moments earlier it started to grate on my nerves.

Then I remembered…
I remembered that they are young and having fun.
I remembered that they love me.
I remembered how important they are to me.
I remembered that just because I have a killer headache life doesn’t stop.
I remembered that they are only young once.
I remembered that they have needs…

They need me.
They need me to embrace their energy.
They need me to laugh at their jokes.
They need me to find joy in how cool the little things in life are.
They need me to listen to the same story, over and over again.
They need me to watch them perfect a new trick, not just one time.
They need me to ignore that pile of laundry for another day and sit down to play.
They need all of this because I MATTER to them. I am important.

My words, actions and reactions matter. They have the ability to make or break. If chosen wisely, they can foster all the wonderful attributes I wish for my boys to have.

So today I had to remember to be thankful for, what could be considered by some, the bad. I had to take a big breath and remain patient. The ‘bad’ things were distracting me from what is important and made me focus on them instead of the bigger picture.
Since that moment of clarity, my day has been spent just loving my little people, soaking up their excitement, guiding their energy into positive play and just having fun; they are only young once.

I am lucky. For that I am honestly thankful for.
